How to Maintain Your “Sunshine” Starter
All sourdough begins with the starter. You can purchase the starter I use from my website here, or you can message me! Once you’ve revived your starter, you have to maintain it, feed it, give it water, and walk it daily (just kidding). Here are some simple step-by-step instructions on how to maintain your sourdough starter.

Step 1
Feed your sourdough starter when she’s hungry! The starter may not have any air bubbles, and may look flat or runny. It may have an acidic odor or colored liquid on top because it’s hungry.
Feed one part starter to one part organic all purpose flour. Add enough filtered/pure water to make a medium pancake like batter consistency, not too thick, not too thin. Mix well!

Step 2
Leave the lid on loosely with the jar at room temperature. The warmer the room, the quicker it will rise.
Step 3
The starter can take a few hours or more to start bubbling. Wait for it to double. Room temperature and humidity will affect the activation rate of the starter.


Step 4
Once the starter had doubled, close the lid and store the starter in the refrigerator until you’re ready to use it. It is ideal to use it in your recipe when it has been activated or “fed”.
Feed it at least once a week with the same process. Store as little as a tablespoon or more as needed.
